This is a recipe I created as part of my 'Healthy Eating with Sickle Cell Disease' talk.
One of the many symptoms of sickle cell disease is fatigue and chronic pain particularly in the joints. To overcome these barriers which can prevent healthy eating, I had to ensure that the recipe card I created required little preparation and minimal effort.
Below is a nutritious fish dish which offers:
A non-meat source of protein also delivering omega-3.
A low glycemic index carbohydrate - aka basmati rice. Basmati rice creates a slower peak in blood sugar levels in comparison to ordinary white rice so it is a good option if you are not keen on brown rice but want a healthier rice option.
A source of iron, B vitamins and fibre from the spring greens.
